This rich, moist and luscious carrot cake with a decadent apricot cream cheese filling, sprinkled with roasted walnuts, is my own fantasy cake and my husband’s favorite! Sweet, just the way a cake needs to feel the real fruit flavours.  Pre-order it for Easter or any occasions. 🐰🐥

The Composition:
– Four layers of soft and moist carrot sponge cake;
– Creamy and soft  apricot mascarpone cream frosting;
– Sprinkled with roasted walnut pieces.

A 6″ size cake is around ~7.5-8′ high.
