  Eclair is around a 10 cm long pastry made with choux dough filled with different flavoured custard (pudding) cream like vanilla, chocolate or strawberry, and with strawberry slices and whipped cream, then topped with powdered sugar and drizzled with dark chocolate. The dough is the same as that used for profiterole.

  A similar pastry in a round shape is called a Religieuse which I prepare upon request.
