An eclair is a pastry made with choux dough filled with fruit-flavoured custard (pudding) cream and whipped cream, then topped with powdered sugar and drizzled with dark chocolate. The dough is the same as that used for profiterole. Other fillings include fruit fillings such as strawberries, blueberries, raspberries, or chestnut purée.
A similar pastry in a round shape is called a Religieuse.
