Dobos Cake | Dobos Torte


Hungarian Dobos Cake (Dobos Torte) is a sponge cake layered with chocolate buttercream and topped with caramel. These golden crunchy caramelized sugar sheets which are covering the top of the cake are a favorite of many of us.

The layered pastry is named after its inventor, Hungarian chef József C. Dobos, a delicatessen owner in Budapest. Dobos cake was first introduced at the National General Exhibition of Budapest in 1885; Emperor Franz Joseph I. and Empress Elisabeth were among the first to taste it. The cake soon became popular throughout Europe.

The original Dobos cake is round, sides of the cake are coated with ground hazelnuts, chestnuts, walnuts, or almonds, and the hardened caramel top helps to prevent drying out, for a longer shelf life.
